Ten Recipes to Teach Children about Healthy Breakfasts

Empowering students to learn about planning and creating healthy breakfasts will help improve their lives and the lives of their parents. 

Here are great tips and resources to enhance lessons from elementary school, afterschool and family and consumer science teachers:

  1. KidsHealth: According to an article on KidsHealth.com, "any breakfast is better than no breakfast", as long as it is healthy. Some breakfast foods KidsHealth recommends is eggs, French toast, waffles, cereal and milk, fruit smoothies, and more. The article also gives students some "weird, but yummy" recipes students can have in the morning before school. Here are just a few:
  • Banana Dog: "Peanut butter, a banana, and raisins in a long whole-grain bun."
  • Breakfast Taco: "Shredded cheese on a tortilla, folded in half and microwaved; top with salsa."
  • Country Cottage Cheese: "Apple butter mixed with cottage cheese."
  • Fruit and Cream Cheese Sandwich
  1. Winners Drink Milk: In this blog, writer Emily Draper encourages adults to incorporate as many of the five food groups as you can." One suggestion is to get "at least three of the five food groups." The post also offers two quick recipes kids can eat for breakfast with a mixture of food groups:
  • Microwavable Coffee Cup Scramble: With an egg, milk, shredded cheese, pepper, and some chopped veggies, kids can have a quick and easy breakfast. The recipe has dairy, protein, and veggies. 
  • Pinapple/Caramel Smoothie with Banana: With this breakfast, all one needs is a blender. With bananas, non-fat Greek yogurt, pineapple, skim milk, and caramel syrup, kids can get a quick and nutritional meal. 
  1. Spoonful: Spoonful.com offers a number of family-friendly recipes for parents to share with their families. Teachers can share these recipes to parents, or bring in their own special dish, for students to try out and learn about the importance of breakfast. Here are just a few from their "Better Breakfast Ideas" list:
  • Peanut Butter Pancakes: "Peanut butter packs these breakfast flapjacks with protein and just the right amount of nutty flavor. Freeze any extras between layers of waxed paper, then simply heat them in the microwave for 35 seconds, flipping halfway through, for a busy-morning breakfast."
  • Ham and Cheese Morning Muffins: "The classic combination of ham and cheese gives plain corn muffins a boost in taste and adds enough heartiness to turn them into a quick, light meal."
  • Southwest Breakfast Wrap: "This simple egg scramble -- made with salsa, beans, and cheese -- is wrapped in a corn tortilla and ready to take on the go."
  • No-bake Chewy Granola Bars: "These low fat bars offer a wholesome after-school snack that's satisfying but not too sweet. The added granola gives them a bit of crunch, and the cashew butter makes them extra moist."
